Wild Monterey Bay Calamari – Tomato On The Vine, Emulsion Lemon Basil Calamares Sauvage Au Beurre Noisette, Tomate Sechées.
Poisson Cru – Ruby red slices of big eye tuna and Japanese fluke in a delicate pool of coconut vinaigrette with yuzu, lime, shoyu + coconut milk, all garnished with avocado, radish, scallions, micro cilantro and last but not least, crispy chicken skin crumbles.
Macaron – Rose scented, lychee, raspberry.
Vacherin – beautifully toasted swirls of meringue atop a Grand Marnier genoise cake with lemongrass gelato, grapefruit compote and gelée.
