They just opened at Irvine Spectrum Center, near Nordstrom, and we had the pleasure of talking with James Tea, managing partner, who shared insights into the allure of their offerings and even shares with us their recipe for French Style Filet Mignon in Black Pepper Sauce. ISC: Is this your first restaurant?
This is our second restaurant in Orange County. We also have locations in Las Vegas and Monterey Park. Our family has been in business for about 30 years, and we have other restaurant concepts throughout California and Nevada.
ISC: How would you categorize this style of cuisine?
Our menu is Cantonese style Chinese food but we also throw in fusion dishes as well.
ISC: What are your specialties?
We specialize in dim sum for lunch, every day, from 10:30am-3pm. Dim sum is a Cantonese style tradition, considered a brunch, with a lot of small Asian tapas like Shiu Mai, Shrimp Har Gow, Steamed BBQ Pork Buns and Shanghai Dumplings. We have over 100 selections to choose from on a daily basis and our chefs come out with new creations all the time.
For dinner, we have a large seafood offering. We keep the seafood live in tanks – lobsters, dungeness crabs, king crabs, and red cod fishes. Our Peking Duck is also a popular dish priced at a great value, $12 for the whole duck (which is half off) Monday – Fridays.
ISC: What do you think will be the most popular dish on the menu?
Our House Special Lobster by far will be the most popular dish. It’s a 4-5lb lobster chopped, stir fired and baked with our house special sauce. We serve it sitting atop garlic noodles. We also have filet mignon cubes served with black pepper and butter sauce.
ISC: Are you involved in creating the recipes?
We have two executive chefs. One in charge of dim sum and the other in charge of our dinner menu. We sit down together and collaborate, but I let them do what they do best. We strive to keep the menu new and fresh and conduct tastings to test out new recipes.
ISC: What do you want people to know about Capital Dim Sum – Seafood – Bar?
The dining experience is authentic Chinese food with the full package – service, full bar, temperature controlled wine room and a large patio. We also have private dining rooms for corporate events, birthday dinners, weddings, or any type of party. Each private room accommodates 10-12 people but we can join rooms and accommodate up to 80. We are open for holiday party bookings. We also will be launching our happy hour Monday – Fridays from 4-7pm.
