Hot Days, Cool Dishes

Don’t want to cook in the heat? We don’t blame you. Cool yourself down with some of our favorite refreshing dishes from Fashion Island and Irvine Spectrum Center.

Is there anything more summery than the gorgeous and simple combination of tomatoes and watermelon? We are obsessed with True Food Kitchen’s seasonal summer special, a salad with heirloom tomatoes, watermelon, goat cheese, basil and cashews, drizzled with just a bit of olive oil (above). O.C.’s newest culinary resident, Del Frisco’s Grille, opens its doors tomorrow at Irvine Spectrum Center and we’re already drooling thinking about their signature Ahi Tuna Tacos with ruby red cubes of tuna tartare, a smear of guac and spicy citrus mayo, all tucked in a crispy fried wonton shell. We can’t think of the last time a dish this simple was so delicious and beautiful. The zucchini carpaccio from FIG & OLIVE at Fashion Island in Newport Beach has just five ingredients: raw sliced zucchini, lemon-infused olive oil, shaved parmesan, toasted pine nuts and a grind of pepper. It’s light but flavorful and the perfect dish to eat during the warm weather when you don’t want to be weighted down. It’s also a great reminder that sometimes it’s the simplest things that are the best. Available at FIG & OLIVE949.877.3005

The only dish that might actually tie with the zucchini carpaccio is the tuna carpaccio, also a dish from FIG & OLIVE. Razor-thin slices of yellowfin tuna get lightly doused in toasted sesame oil, with marcona almonds, cherry tomatoes and micro cilantro. It’s melt-in-your-mouth goodness with a little bit of crunch.
